What's for lunch?
A hearty lentil soup as prepared by Abi Falafel is a perfect remedy for a gloomy afternoon.
Ingredients (serves 4):
3 potatoes
2 onions
5 garlic cloves
1 carrot
¼ of cauliflower
150 g brown lentil
1 l vegetable stock or water
olive oil
curry powder
salt and pepper

mixed nuts (almonds, pine nuts, cashews, peanuts, hazelnuts …)
fresh coriander

sour cream and fried pita bread (optional)
Put the chopped onion and garlic in a pot with some olive oil and add half of the lentils. Fry for a while, then add the stock or water and let it simmer before adding cauliflower and potatoes that you have cut into cubes. When the vegetable is cooked, mix the soup until creamy. Add the rest of the lentils, grated carrot and curry powder. Salt and pepper to taste and cook for another 20 minutes.
Chop the nuts and fry them in a pan with a spoonful of olive oil - be careful not to burn them! Put the soup in bowls, sprinkle it with nuts and top with chopped coriander. You can also serve the soup with some sour cream and fried pita bread.
